Omelette PizzaOmelette Pizza

Mix 2 eggs in a bowl. Melt a small knob of low-fat spread in an omelette pan, pour in the egg mixture and cook gently until nearly set, do not turnover. Remove from the heat and layer the top with sliced, raw mushrooms, 3 thin slices of tomato and grated cheese. Place under hot grill, still in it’s pan, until golden on top. Serves 1.

Place two large, flat mushrooms (Portobellos are ideal), gills side up on to a baking tray. Top with 2-3 teaspoons of Boursin cheese and grill until golden. Delicious served with a green salad and dressing. Serves one.

 

 

 

 

Chicken TikkaChicken Tikka

Wonderful served for lunch or dinner with a green salad or stir-fried vegetables. A natural low-fat yoghurt dip would complement it beautifully.

Combine in a bowl 5 chicken breasts cut into cubes, 1 crushed garlic clove, 1 teaspoon grated fresh ginger, 1 teaspoon chilli powder, 1/2 teaspoon turmeric, 150 ml low fat natural yoghurt, 3 tablespoons lemon juice and 1 tablespoon chopped fresh coriander. Marinate in the fridge for 2 to 3 hours. Place marinated chicken pieces in ovenproof dish or a grill pan and baste with olive oil. Grill under a medium heat for 15-20 minutes until cooked. Turn/baste 2-3 times during cooking. Serves four.
